It is necessary to choose wine for a dish, based on its composition, the sauces and seasonings used, however, it must be borne in mind that broccoli, Brussels sprouts and garlic are the worst combined with this drink. This was announced by the head of the department for research and promotion of domestic wine products of Roskachestvo Olesya Bunyaeva.
According to the specialist, Brussels sprouts have organosulfur compounds that give off earthy and nutty flavors that don’t pair well with wine. A similar situation with garlic and broccoli, she said.
Bunyaeva warns that asparagus also does not go well with wine, which leads to a metallic taste when consumed. But if it is fried in oil or served with a sauce, then this product can go well with dense wines, in particular, barrel chardonnay. As noted, artichokes are among such problematic products.
Also, wine is not the best friend with soy sauce due to its complex sour-salty-sweet taste, which seriously complicates the choice of drink.
