Rolls “Philadelphia” are not safe for health

The national system for monitoring the quality of goods “Roskachestvo” conducted a study of Philadelphia rolls of 15 brands. The results were disappointing.
Rolls “Philadelphia” are the most favorite among Russians. A survey conducted by Roskachestvo among visitors to its portal and subscribers in social networks showed that Philadelphia rolls are preferred by 73% of respondents. Therefore, it was decided to check how they meet the quality requirements and the necessary standards.
The study involved rolls that can be ordered at home. Experts checked the products of 15 brands: Yakitoriya, Tanuki, Planet Sushi, VkusVill, Niyama (Ozon delivery), Pizza Sushi Wok, Azbuka Vkusa, Globus, SushiWok, Shore House, Bluefin, Sushi Market, SushiSet, Spar, Yami Yami. Rolls of six trademarks are produced in Moscow and the Moscow region, another nine trademarks do not have markings and / or information about the manufacturer or manufacturer. The price of samples varied from 236 to 1290 rubles.
All rolls were checked for 17 indicators. And by results research products of all brands received criticism.
In the laboratory, the rolls were tested for organoleptic indicators: taste, smell and color. Consumers have repeatedly noted that when ordering, they came across rolls with an unpleasant odor.
There were no deviations in appearance and color. But the rolls of two TMs – Yami Yami, SushiWok – had pronounced defects in taste and smell.
The Yami Yami rolls had an unpleasant foreign smell, presumably due to the packaging. In SushiWok rolls, nori has a musty taste.
In addition, with regard to rolls of a number of brands, expert tasters noted:
“Yakitoriya” – a slightly sour smell and sour taste.
“VkusVill” – the taste is sweetish-sour and sour smell.
“SushiSet” – the smell is sharp sour.
Spar – the smell is sour.
“Niyama” – a smell with sourness.
Pizza Sushi Wok – sour smell.
Rolls TM “Yakitoria” contained phytosterols, which are signs of vegetable fats. Unscrupulous manufacturers, in order to reduce the cost of production, may not use Philadelphia cheese, but a cheaper substitute for milk fat.
Escherichia coli (E. coli) was found in 2 TM products, which indicates a violation of sanitary and hygienic standards during production. These are VkusVill and Spar rolls.
The content of coliform bacteria is exceeded in 6 TM products. Bacteria were found in rolls of TM VkusVill, Spar, Sushi Market, Yami Yami, SushiWok, Pizza Sushi Wok. This indicates a violation of sanitary standards in the preparation of rolls.
In rolls 15 TM, an excess of the standard value for the number of mesophilic aerobic and facultative anaerobic microorganisms (KMAFAnM) was revealed. These requirements are mandatory and are contained in the technical regulations. Products with comments: VkusVill, Spar, Niyama, Globus, Yakitoriya, Tanuki, Shore Hause, Sushi Planet, BLUEFIN, Yami Yami, SUSHIWOK, Pizza Sushi Wok, Sushi Market, Sushi Set, Azbuka Vkusa. Exceeding the QMAFAnM norms indicates the multiplication of microorganisms, the cause of which may be non-compliance with the storage conditions of the ingredients.
Information about the identified violations was provided to manufacturers, sellers, as well as to control and supervisory authorities.
