It is very difficult for an unversed person to distinguish real cheese from a fake. Experts told “Rossiyskaya Gazeta” about ways to find the differences yourself.
Representative of the Russian cheese-making company Aina Abdeeva stated that natural cheese is made only from cow, goat and sheep milk with the addition of the necessary ingredients: starter cultures of lactic acid microorganisms, a sealant – calcium chloride and a milk-clotting enzyme. At the same time, the cheese product may consist half of Russian fats and look like natural cheese.
“For example, they may have the same pattern of bulk cheese (like Russian) or sheet cheese (like Dutch), the same color due to the addition of the natural dye annatto,” Abdeeva said.
She also noted that people who eat cheese frequently may notice differences in taste and smell.
In addition, the head of the Rostest Ural Certification Center, Ekaterina Kurbatova, stated that all ingredients, as well as the country of origin, must be indicated on the label of natural cheese.
