All this is familiar food, but the Team of the Association “Algae Groups” within the framework of the project “Algae is Health!” developed a technology for the production of an ingredient from algae and began its supply to Russian food industry enterprises. The goal of this project is to improve people’s health and reduce the risk of developing diet-related diseases through food fortification. Numerous studies have proven the antitumor, immunomodulatory, anti-inflammatory, antimicrobial, antibacterial and antiviral activity of algae. When processing raw materials into an ingredient, all the active beneficial properties of algae are preserved. The Arkhangelsk algae plant is engaged in the production and supply of White Sea algae. At the state level, the project was supported by the Regional Development Agency of the Arkhangelsk Region. The development of the technology for the use of algae took place at the regional enterprise CJSC NP “Arkhangelskkhleb”, as a result of which consumers received tasty and healthy bread “Health with algae”. It is planned to supply this useful product to other regions of Russia.

The Corporate Council under the Ministry of Trade and Industry of India, formed in 1987, promotes Indian spices in the world market and serves as a link between Indian exporters and international importers. Today, India exports about 225 types of spices to more than 180 countries around the world. High quality is the hallmark of Indian spices and one of the main factors behind their worldwide popularity. Currently, the Council has established nine laboratories for quality assessment in the main industrial areas of India: Mumbai, Guntur, Calcutta, Jodhpur and others. In India, there is even a national research institute for cardamom, whose activities are entirely devoted to the study of this spice. Companies in India produce and export chili peppers, turmeric, seeds and powder of cumin, coriander, mustard, fenugreek, cloves, cardamom, black and white sesame seeds, whole and powdered ginger, dried garlic and onions, and many other spices.

The trend towards a healthy lifestyle will continue to influence the growth in the production and consumption of organic food. Consumers are increasingly concerned not only about personal health, but also about the state of the environment. Consumers cite health benefits, a desire to diversify their diet, and less harm to the planet as reasons why plant-based foods are increasingly being chosen. People have begun to pay much more attention to the composition of products and give preference to natural ingredients and organic products, as natural ingredients are associated with a healthy lifestyle and care for the environment. When choosing food products, consumers immediately after food safety look at the natural origin of products.

Healthy eating is great, but admit it, we can’t all live without sweets! Today, the industry is seeing increased demand for sugar-free confectionery, whole grain biscuits, natural marmalade, nuts and dried fruits, unique plant-based treats, chocolate with honey and mini sweets.

It is interesting that among the most popular sweets that Russians buy are bar chocolate (31%), cakes (24%), buns, cookies and other flour products (20%), sweets (20%), as well as marshmallows, marshmallows, jam, jam, halva and other oriental sweets (less than 7%). Approximately 35% of Russian citizens eat confectionery and bakery products daily, 31% several times a week, 7% once a week, 22% once a month, and 5% on special occasions. 57% of Russians claim that they could theoretically completely abandon confectionery in their diet (oh, something is hard to believe). However, 43% doubt that they could absolutely not consume sweets (here, this is definitely about me!).

Traditionally, a large-scale business program has been prepared for exhibitors and visitors of WorldFood Moscow 2022. Leading industry experts share their experience and market statistics, discuss industry trends and hold practical conferences on the development of various product categories for specialists from commercial departments of retail chains. How to make a product more noticeable on the trading floor, what new opportunities exist today for promoting brands in retail outlets, what are neuromarketing strategies – all these important issues for sellers and manufacturers are discussed at round tables and conferences. Participants from various regions of Russia have the opportunity to present their innovative projects, arguing the need for investment in business. At the Business for Everyone exposition site, visitors will get acquainted with the products of young manufacturers and individual entrepreneurs.

As part of the business program of the exhibition, a traditional solemn award ceremony will be held based on the results of the tasting competition “Product of the Year”. As part of the latter, this year, in addition to the laureates in traditional nominations, winners will be determined in two new categories – “Innovations in Food” and “Perspective Import Substitution”.

For the first time, a culinary marathon has been organized at WorldFood Moscow 2022, where visitors will have the opportunity to taste dishes prepared by chefs from the products of the exhibition participants.
