Maslenitsa in Russia in 2023 began on Monday, February 20, and will last until Sunday, February 26. Since ancient times, baking in the form of a circle symbolizes the sun – the onset of spring. This is how we say goodbye to winter and welcome spring. There are many recipes for pancakes, today the soloist of the group “Brilliant” Nadia Ruchka shares the recipe for this delicacy with the readers of Moskovsky Komsomolets.
– I can’t say that I celebrate Maslenitsa strongly and widely, but I look at this holiday as a bright and beautiful transition to Great Lent, which has always opened a new page in my life. One day, fasting changed my life quite dramatically.
I prefer to serve pancakes with slightly salted fish or with honey.
By the way, I once learned that our ancestors put a different meaning into the expression “the first pancake is lumpy” than we give it. This does not mean at all that the first pancake failed. This expression is related to the pagan Slavic holiday Komoyeditsa. This holiday marked the end of winter and the awakening of bears, and these large animals were considered the “ancestors” of people. And so, the very first pancakes that were baked were taken to the bears in the forest, and placed next to the lairs as a gift of offering. People used to be closer to nature, and they had to live in harmony with these powerful animals for another whole year.
Pancake recipe from Nadia Ruchka
Ingredients for 6 servings:
– kefir – 500 ml.
– flour – 300 g.
– chicken egg – 2 pcs.
– boiling water – 250 ml.
– sugar – 30 g.
– salt – 0.5 tsp
– vegetable oil – 80 g.
Cooking method.
In a metal bowl, beat the eggs and salt with a whisk. Pour kefir into the resulting mixture and continue to stir. Then put the bowl on the stove. Stirring continuously, heat until hot. Remove from the burner, and pour the sifted flour into the hot mass.
At this time, boil water separately and add salt to it, but do not stir, but let it brew for several minutes.
We take our dough, beat it well again and pour water and salt into it. Then add vegetable oil to it, stir and let it brew for 10 minutes.
Next, let’s start frying. Pour some batter into the pan. Fry for one minute on each side, gently flipping with a metal spatula.
Bright and ruddy pancakes will be ready soon. We should get a spectacular lace pattern. Since there is no soda in the pancakes, they will turn out to be very fragrant and crispy. The total cooking time for our delicacy is about 30 minutes.
