The Olivier index was created in 2009 by analogy with the American Big Mac index. This index is used to calculate the total cost of products for a single recipe for four servings. In the original version, the calculations were reduced to measuring the level of inflation; in the Russian version, the Olivier index may be higher than its official indicators.
The calculation was made based on the classic recipe: 500 g potatoes, 200 g carrots, 5 pcs. chicken eggs, 300 g boiled sausage, 100 g onions, 400 g canned green peas, 400 g pickled cucumbers, 200 g mayonnaise, 30 g dill or parsley.
Chicken eggs will cost Russians the most, based on the median price of 91 rubles. for five grand. The average cost of carrots increased by 18%, to 9 rubles, greens – by 11%, to 31 rubles, and 300 g of boiled sausage – by 7% and amounted to 112 rubles. The median cost of pickled cucumbers increased by 5%, to 83 rubles, while green peas lag behind in growth, increasing by 4%, to 85 rubles. Potatoes added 3% to 51 rubles. However, the median cost of mayonnaise in Russian stores decreased by 3%, to 53 rubles, according to the Check Index data.
In Moscow, a set of products for Olivier salad also increased in price by 7–8%, to 655 rubles. Compared to 2022, the cost increased by 45.7 rubles, reported the City News Agency “Moscow” Associate Professor of the Department of Statistics of the Russian Economic University Plekhanova Olga Lebedinskaya.
Olivier index in the Chelyabinsk region increased by 3.3%. The same set in Vladivostok has risen in price by only 1 ruble, reports local “RIA VladNews” In Khabarovsk, salad went up in price by 120.28 rubles, reports “IA AmurMedia“
