Irina Berezhnaya, candidate of medical sciences and nutritionist, told Sputnik radio that homemade jam can boast undoubted advantages compared to store-bought counterparts.
According to Berezhnaya, food industry enterprises use long-term heat treatment of berries and fruits in order to extend the shelf life of the product. This complies with GOST standards and ensures safety for consumers. However, as the nutritionist emphasized, this approach has a significant drawback.
“Strong heat treatment “kills” all natural vitamins. If the resulting product contains vitamins, they were added later,” she explained.
Homemade jam retains more useful substances, especially for “five-minute jams”, which do not sit on the stove for very long, Berezhnaya added.
The nutritionist identifies four key parameters in which homemade jam outperforms fruit products from the food industry.
