Nutritionist-consultant, Deputy Director of the ANO NRC “Healthy Nutrition” Alexey Kabanov told “Gazete.Ru” about the most useful spring products. As it turned out, this is not only local seasonal vegetables and herbs.

Kabanov said that wild garlic, also known as wild or bear onion, is the most useful spring fruit, which begins to be harvested in Central Russia as early as April.

“Wild ramson is rich in vitamin C, contains essential oils that have an antibacterial effect, as well as B vitamins and carotenoids, a precursor of vitamin A,” the nutritionist explained. In addition, wild garlic is useful for improving appetite and normalizing the digestive tract.

Spring radish is also very useful, which has an extremely short growing season: only 35-40 days. In this regard, in central Russia, the first harvest of radishes is harvested by the end of April.

“Like other cruciferous plants, radishes are rich in biologically active substances that have anti-cancer effects. The American Cancer Society has listed cruciferous vegetables as an anti-carcinogen and recommends including them in your diet at least 2-3 times a week. In addition, radishes are low in calories – only 16 kcal per 100 g of weight and rich in fiber, which makes them an ideal dietary product,” the expert said.

Rhubarb is no less useful in spring. Kabanov recalled that only the stems of this plant are edible, as there are toxins in the roots and leaves.

“Rhubarb is a valuable source of vitamin K, which is involved in hematopoiesis and helps in the absorption of calcium. For the strength of bones and teeth, vitamin K is no less important than calcium. Rhubarb is also rich in antioxidants, in particular anthocyanins. This pigment gives the stems of the plant a reddish color. The redder the stems, the more anthocyanins in the plant,” said the nutritionist.

Kabanov also recalled that the high fiber content of rhubarb stalks allows you to regulate cholesterol levels in the blood and normalize digestion.
