Restaurants in the Russian Federation intend to change the recipe for Caesar salad due to a shortage of canned anchovies. The taste of a famous dish may also become different, writes the Vedomosti newspaper.

As restaurateurs note, anchovies were previously purchased in Italy, but after restrictions on the import of seafood from unfriendly countries, which will be relevant until the end of the year, almost all fish stocks from suppliers have run out. In addition to anchovy, cuttlefish ink, which cooks used to color pasta and burgers black, was no longer introduced into the country.

Today, restaurants are looking to other suppliers of canned anchovy in Asia and Africa, but chefs cannot say whether the taste of the dish will remain the same. Perhaps the catering industry will need to purchase ready-made sauces for Caesar, gastronomy representatives noted.

According to Yakitoria brand chef Stanislav Bakharovsky, Caesar has become one of the most popular salads in the Russian Federation, and it cannot be replaced on the menu.

As Russian diplomat in Norway Teimuraz Ramishvili said, such sanctions will help domestic organizations occupy vacated niches in the market, in particular in the premium segment.
