One of the most popular dishes on the New Year’s table is a herring under a fur coat. And to make it easier for themselves, many housewives use ready-made and chopped herring fillets. You can choose the best preserves from herring using the Roskachestvo rating.

On New Year’s Eve in Roskachestvo checked herring preserves in oil 19 brands. Test samples were purchased at Auchan, Lenta, Verny, Metro Cash & Carry, Magnit, Globus, and the Perekrestok Vprok online store.

Violations of microbiological indicators were identified in the products of 10 brands. Also, some samples did not meet other Roskachestvo standards. In total, preserves were studied according to 32 indicators.

What pleases, all the studied samples comply with the norms for the content of preservatives. No deviations in the number of tail pieces were found in them.

In all the studied products, E. coli and Salmonella bacteria were not found, and the number of sulfite-reducing bacteria of the genus Clostridium and S. aureus was within the normal range.

Nevertheless, most of the violations were identified precisely by microbiological indicators. So, in the preserves of the trademarks “A’more”, “Marty”, “Ocean”, “O’Key” and Vici, an excess of microorganisms (KMAFAnM), yeasts and molds was found.

In the preserves of the Tesey trademark, an excess of the norms for the content of QMAFAnM and yeast was recorded.

In jars with herring fillets of the brands “Each Day” and Leor, the norms for the content of QMAFAnM were not observed, and more yeast was found in the products of the brands “Russian Sea” and Delicatesse de Mare.

According to the results of the study, preserves of seven brands do not meet the requirements of TR TS 040/2016 for the mass fraction of fish and oil. So, according to the Roskachestvo standard, the mass fraction of fish should be at least 65%, the mass fraction of oil (filling) – no more than 35%. And in the preserves “A’more” and “Marty” contained 60% of fish and 40% of oil, in the products of TM “Atlantika”, “O’Key” and “Ocean” – 61% of fish and 39% of oil, in cans of TM ” Russian Sea” and Vici – 56% fish and 44% oil.

The highest rating of experts – 5 points – was received by the products of five brands:

Baltiysky Bereg (LLC Trade House Baltiysky Bereg, St. Petersburg),

“Lenta” (manufacturer: OOO “Lenta”, St. Petersburg, manufacturer: OOO “TD “Baltic Coast”, St. Petersburg),

“Meridian” (JSC PKP “Meridian”, Moscow),

“My price” (manufacturer: JSC “Tander”, Krasnodar, manufacturer: JV “Santa Bremor” LLC, Republic of Belarus),

“Prosto” (LLC “Ocean Trading Company-P”, St. Petersburg).

Slightly lower – 4.88 points – is the rating of herring fillet TM “Fish Kitchen” (produced in Russia by LLC “Akvatoriya +”) and “Herring Stolichnaya”, under the brand name “Stolichnaya” (produced by JV “Santa Bremor” in the Republic of Belarus) .

The fish of these brands turned out to have a little less salt than established by the advanced standard of Roskachestvo. Otherwise, they fully comply with all standards and norms.
