There are ways to keep bread fresh for up to 12 days, Valery Burmatnov, a teacher at the Department of Grain, Baking and Confectionery Technologies at ROSBIOTECH University, said in an interview with RT.
He noted that containers made of wood, which creates a favorable microclimate for baked goods and also has bactericidal properties, help keep bread fresh longer than usual. Bread bins made of juniper, birch or larch are best suited for these purposes. At the same time, he noted that the wooden bread box will have to be changed every 2-3 years, as it gets dirty and absorbs odors.
“Wood – up to two days, then bread and bakery products will begin to go stale, plastic, metal – up to three days, then mold may appear,” the specialist explained.
He also noted that when storing bread in a plastic bag, holes will have to be made to prevent the greenhouse effect.
“Instead of polyethylene, it is allowed to use metal food foil. Ceramic pots and pans are also suitable for storing bread and bakery products.”
He also recommended storing baked goods made from wheat and rye flour separately.
According to him, special paper bags in which bread is sold in stores protect against dust, dirt, allow bread and bakery products to breathe, but do not protect against drying out.
According to him, reusable special bags equipped with perforated gaskets are already on sale. In them, bread can be fresh for up to 10-12 days.
