A set of Olivier products has become more expensive in Russia

In the second half of November 2023, the cost of preparing a classic Olivier salad with sausage for four people amounted to 523 rubles, according to the median price of ingredients in Russian stores. Writes about this “Gazeta.Ru” with reference to statistics from the Check Index resource of the OFD Platforms company.
Compared to the same period last year, expenses increased by 37 rubles or 7.7%.
The calculation was made on the basis of the classic “Soviet” version of the salad with boiled sausage, including 500 g of potatoes, 200 g of carrots, 5 pcs. chicken eggs, 300 g of boiled sausage, 100 g of onions, 400 g of canned green peas, 400 g of pickled cucumbers, 200 g of mayonnaise, and 30 g of dill or parsley.
Chicken eggs turned out to be the most noticeably more expensive from this list – the median price for 5 pieces was 91 rubles, which is 25% higher than last year. The cost of the required amount of carrots increased by 18%, reaching 9 rubles, and dill or parsley – by 11%, amounting to 31 rubles. The price of 300 g of boiled sausage increased by 7%, reaching 112 rubles. They are followed by pickled cucumbers (plus 5%, 83 rubles), green peas (plus 4%, 85 rubles) and potatoes (plus 3%, 51 rubles). At the same time, the median cost of mayonnaise in Russian stores decreased by 3%, to 53 rubles.
Experts note that when preparing Olivier salad, Russians, as a rule, do not skimp, preferring higher quality ingredients. In general, the Olivier index turned out to be lower than the annual consumer price index for fruits and vegetables. Retail outlets strive to keep prices for these goods at a level acceptable to customers, experts say. The study was based on an analysis of 55-57 million cash register receipts from more than 1.1 million online cash registers in Russia for the period from November 15 to November 30, 2023 and 2022.
