Chef Vitaly Laptinov shared the recipe for Olivier salad, which, according to him, is correct. Among the components of this salad are guinea fowl, crayfish necks, salmon caviar and quail eggs, reports “Gazeta.Ru“.
For cooking you will also need potatoes, fresh and pickled cucumbers, carrots, chicken eggs, green peas, homemade mayonnaise, onions, fresh herbs, radishes, watercress, salt and pepper, Laptinov said.
Potatoes and carrots should be boiled until fully cooked, cooled and peeled, and a chicken egg should be hard-boiled. The chef recommended marinating the guinea fowl fillet with salt and pepper and cooking for 30 minutes using sous vide technology, and then cooling. All prepared ingredients should be cut into small cubes.
