In an interview with Sputnik radio, nutritionist Natalya Kruglova shared recommendations on what ingredients should be excluded from the okroshka recipe to make this summer dish even more healthy.
The composition of okroshka is very diverse and contains many important nutrients for the body, such as fiber, proteins, complex carbohydrates, vitamins and minerals. Okroshka is an excellent option for summer soup, Kruglova emphasized. However, according to her, harmful products are often found in the okroshka recipe. In particular, the use of sausages can lead to the development of cardiovascular diseases and intestinal cancer, the nutritionist warned.
As Kruglova explained, adding sausages to okroshka increases the content of saturated fats in the dish. Excess saturated fat in the diet is a risk factor for cardiovascular disease. Regular consumption of processed meats, including cold cuts, has also been associated with an increased risk of bowel cancer.
Instead of sausage, the nutritionist recommends adding boiled beef or poultry to the traditional summer soup. Okroshka is better to fill with sour-milk drinks instead of kvass, she believes.
In terms of health benefits, kefir and other fermented milk drinks are preferred because they not only provide a complete protein source, but also contain bioavailable calcium. Kvass, on the other hand, contains simple sugars and can stimulate appetite, especially when combined with salty foods, Kruglova explained.
