Scientists Invent ‘Diet’ Whipped Cream

A team of scientists led by Jens Risbo from the University of Copenhagen has developed a product that tastes and feels like whipped cream, but contains almost no fat. In the “classic” whipped cream, its share is about 38 percent.
In the new dish, instead of milk fat, two types of lactic acid bacteria help whip the cream.
The new product is almost entirely composed of four ingredients: water, bacteria, milk protein and a thickener.
The scientific work was published in the journal Food Hydrocolloids.
