Ginsburg said that 80% of the fatty acids in food come from two acids, palmitic and oleic. “Palmitic fatty acid is harmful, it contributes to the development of atherosclerosis, oleic acid is the opposite,” he said.
According to the physician, the prevention of atherosclerosis also contributes to the use of omega-3 fatty acids, which can be obtained from fish oil, olive and linseed oil. In turn, sunflower, corn and soybean oils accelerate the processes of atherosclerosis and aging. He also urged to limit the amount of trans fats consumed, which are very poorly absorbed.
“Palm oil is very rich in trans fats, which today is added to cheeses, sour cream, confectionery,” he said.
