This small, energetic animal does not hibernate, it is forced to jump from branch to branch all winter in search of food, and its skin is not so fleecy, and by spring, offspring must also be born, fed and warmed. Where does so much strength come from? The secret is simple. The basis of the squirrel’s diet is nuts and seeds, with which it stocks up in the fall and then searches for its caches in the winter.

So what is it about these nuts?

Nuts are a very high-calorie product, its energy value reaches 500 – 700 kcal per 100 grams. They saturate well and reduce the feeling of hunger. The basis of nuts are proteins. And vegetable fats are not deposited in extra pounds and do not contain cholesterol. It is no coincidence that nuts are included in many diets, but you should not exceed the daily allowance of 30 grams. After all, they contain a large number of amino acids that can cause herpes, and when overeating this product, you may experience:

– pain in the liver;

– excessive influx of forces;

– increased body temperature;

– headache;

– Discomfort in the stomach and intestines.

The nuts we are most familiar with are hazelnuts, pine nuts, walnuts, almonds, pistachios, and peanuts, although the latter is not a nut but is actually a bean. Different types of nuts have a similar composition, but in some the concentration of nutrients is higher.

Nuts in reasonable doses can be eaten every day. With regular use, a beneficial effect of the product on the body is noted, and people who eat a handful of nuts daily, due to their Omega-3 content, are less likely to experience problems with the cardiovascular system.

Nuts are useful for preventing anemia, reducing stress levels, and normalizing blood pressure. They improve the health of the thyroid gland, help the absorption of iron, the formation of hemoglobin. Due to vitamins and minerals, they strengthen bone tissue and relieve inflammation in the body.

Hazelnuts reduce the level of “bad” cholesterol. Pine nuts are recommended during the recovery period after illness, as well as for nursing mothers. Walnuts have a positive effect on brain function and memory, reduce anxiety, pistachios improve liver function.

But more and more exotic nuts began to appear on store shelves. What are these nuts and how are they useful?

These nuts include Brazil nuts, pecans, and macadamia.

Macadamia oil, Australian nut oil, or, as it is also called, mullimbimbi, boomer, kindal-kindal, is useful for those who have dry skin, because it has a softening effect, normalizes the sebaceous glands.

The taste of macadamia is similar to hazelnuts, but the consistency of the kernel is softer and more oily. 100 g contains 76% fat, 14% carbohydrates, 8% protein, 718 kcal. The most valuable quality of the nut is a complete group of B vitamins, a high content of potassium, magnesium, phosphorus, as well as vegetable fats and organic acids. The unusual delicate taste of the nut allows it to be used in culinary creations.

Brazil nuts are one of the richest superfoods. They contain a large amount of selenium. They have anti-inflammatory properties, the ability to regulate the functioning of the thyroid gland. Experts link low selenium intake with thyroid disease. Just one Brazil nut contains an average of 80 micrograms of selenium. At the recommended daily dose of 200 micrograms, you only need to eat a few Brazil nuts per day to ensure adequate levels of this important nutrient.

And the Indian pecan, or, as it is also called, “olive nut”, is good for the health of nerves and blood vessels, as well as vitamin deficiency, anemia, helps relieve fatigue and improves appetite, regulates testosterone levels in the blood, develops the sex glands and provides emotional lifting, stimulates the work of the kidneys, liver and gastrointestinal tract, has anti-cancer properties.

Pecans are the number one nut in terms of the content of healthy, vegetable fats. These walnut-like things aren’t harmful if consumed properly, but if you ate 100 grams of pecans, you’d have to run 8 km.

Most of the nutrients in pecans are monounsaturated, while walnuts are polyunsaturated. Both of these fats are considered good fats, providing many health benefits. However, walnuts contain much more omega-3 and omega-6 fatty acids than pecans.

One important thing to keep in mind is the proper use of nuts. They contain phytic acid, which binds food components and prevents them from being absorbed. In order to reduce the level of this acid, they are soaked in water for 2 to 12 hours, depending on the type, and then the nuts can be slightly dried in the oven.

Macadamia should be soaked for 2 to 4 hours, cashews for 6, hazelnuts, pecans, walnuts and pine nuts for 8, almonds should be kept in water for the longest – 12 hours.

Nuts are truly natural medicines.

They can be eaten raw or added to various dishes, sauces and pastries.

Now, during fasting, you can cook lean nut bagels.

To prepare the dough you will need:

– flour – 3 cups (500 g),
– a glass of warm water (mineral water is possible) – 250 ml,
– vegetable oil – 80 ml (1/3 cup),
– sugar – 3 tbsp. spoons (60 g),
– salt – 1/3 teaspoon,
– pressed yeast – 15 g (or 5 g dry),
– vanilla – to taste.

For the filling, any crushed nuts with the addition of a small amount of sugar or nut jam are suitable.

The flour must be sifted. Soak yeast in a bowl of warm water. We add sugar to them, then butter, then flour, finally salt. Knead the dough so that it lags behind the hands. Place the dough in a bowl greased with oil for 1 hour to rise. Next, roll out the dough, cut into pieces and put the filling. On a baking sheet with parchment paper, lay the pastry for 20 minutes for proofing. To make the dough beautifully browned in the oven, grease the blanks with strong tea or coffee. If desired, the dough can be sprinkled with poppy seeds, sesame seeds, nuts. And send it to a preheated oven. Bake at 200 degrees C for 25 minutes. After taking out the finished bagels from the oven, they can be greased with water and honey, then they will have an even more attractive shiny look.
