The New Year is approaching, and according to the established tradition, in December, Mosstat and Rosstat calculate the index of the most popular dishes on the festive table – Olivier salad and herring under a fur coat.
The recipe for this popular dish, according to statistical agencies, looks like this: 400 g of boiled sausage, potatoes and pickled cucumbers, 4 eggs, a can of green peas (380 g), 200 g of carrots and 100 g of onions. Fill all 200 g of mayonnaise.
This is quite enough for a family of four, and even the next day.
And, of course, there are aesthetes who always add a fresh cucumber, take not a simple onion, but purple or white, otherwise they add apples, or boiled chicken instead of sausage. Well, for decoration – dill, parsley or even green onions. But this is not included in the standard calculation.
In addition, there are discrepancies about which cucumbers to use – pickled or salted. Both Rosstat and Mosstat believe that cucumbers, although many housewives claim that only salted ones are suitable for Olivier!
So. According to Rosstat, the average cost of Olivier salad in Russia was 480 rubles. The most expensive traditional dish will cost the residents of Chukotka – 792 rubles. The lowest cost of salad ingredients is in the Belgorod region: 360 rubles. Compared to November 2021, the price has increased by 8.53%.
According to Mosstat’s calculations, Olivier salad will cost Muscovites 617.6 rubles. Residents of the Moscow region will absorb the same salad for 540.33 rubles. Compared to November last year, this traditional dish has risen in price: for Moscow by 6%, for the region – by as much as 12%.
During the year, mayonnaise grew the most in price – by 16%. In second place are pickled cucumbers and peas – they have risen in price by 12.8%. Sausage has risen in price by only 3%, the price of eggs has not changed at all, and onions, carrots and potatoes have generally fallen in price. On average, the price of Olivier salad increased by 6%.
The recipe for herring under a fur coat for statistical calculations looks like this: 350 g of salted herring, 2 eggs, 300 g of mayonnaise, 400 g of potatoes, 100 g of onions, 300 g of beets and 200 g of carrots. It turns out a little more than one and a half kg.
Again, this dish will cost the residents of Chukotka the most – 562.86 rubles. But residents of the Republic of Mordovia will be able to cook it for 177.48 rubles.
Well, in the capital, the cost of herring under a fur coat was 253.52 rubles. In the Moscow region – 227.81 rubles. In this set, in addition to mayonnaise, the price of herring also rose by 7.5%. Due to these two products, the total set has become more expensive compared to November last year by 3.7%.
