The secrets of making delicious and healthy potato pancakes were revealed in the program “About the Most Important” on the Russia 1 TV channel, its host Alexander Myasnikov and chef Gleb Astafiev.
To make pancakes tasty, you need starchy potatoes. When grated, it “combines” better with the rest of the ingredients, Astafiev explained.
And Dr. Myasnikov recommended rubbing the potatoes along with the peel, because it contains “a lot of potassium.” And, “if you are on diuretics, do not spend money on dried fruits,” the doctor said, advising to simply cook potatoes in their skins or use them for pancakes along with the skin.
The chef also said that it is possible to replace the onion, which is used in the classic version of potato pancakes, with other types of this vegetable crop. For example, “if we want potato pancakes that are more ‘fun’, with a purple tint and no less useful, we can use red” onions, Astafyev said. There are also recipes with green onions.
More wheat flour can be added to potato pancakes, and for a change, corn, rye, buckwheat and soy flour can be poured into the dough.
To make pancakes less nutritious, half the potatoes are replaced with zucchini and baked in the oven.
The cook advised frying potato pancakes only in a well-heated frying pan in vegetable oil, and at the end add butter.
