“Prices have increased for a number of imported goods, such as marbled beef, which was no longer supplied by foreign companies. The situation is similar with the Magadan shrimp – the volume of catch has decreased, but prices have increased,” said Sergey Mironov, vice president of the FRiO.
The rise in prices for some products reaches 35%. In particular, restaurants have faced higher prices for imported olive oil, sauces, seafood, canned food and other products. In the prime cost of the menu, food prices make up 25-30%, explained Elena Perepelitsa, general director of the consulting company Restcon. According to her, the rise in food prices entails a gradual increase in the cost of meals in restaurants.
Prices in restaurants began to rise back in 2022. According to the results of last year, prices rose by 10-20% and will continue to grow this year, according to FRiO. According to the owner of the Teremok chain, Mikhail Goncharov, restaurants raise prices every two to three months if the cost of food is growing at a rapid pace, and once every four to six if it is slow.
The day before, on June 19, it became known about the increase in prices in the cafe “Vkusno – and that’s it.” It is assumed that from June 26, product prices grow up by an average of 6% due to an increase in the cost of products.
