Bookings for visiting chefs increased by 20% this holiday season, as did the number of events. “Kommersant FM” found out that it is almost impossible to find a culinary master for a private dinner in the last week of December. The exception is bulletin boards and specialist search services. The average price is 30-40 thousand rubles. But the fees of brand chefs of famous restaurant groups reach amounts with six zeros. Who dictates prices in this market? And how much does it cost to invite a Michelin-starred professional into your kitchen? Aelita Kurmukova sorted it out.

And the cost of a chef can now consume up to half of the holiday budget, if we are talking about professionals from well-known restaurant groups. The higher the status of the chef, the more he will ask, says Moscow restaurant market ombudsman Sergei Mironov: “Prices depend on the level of the chef and range from 10 thousand rubles. up to 300 thousand rubles.

This is a kind of conditional border. There are chefs who will take much more. It is also important whether he came alone or with assistants. Nobody likes to travel alone. Most chefs work in restaurants and earn extra money. This is not their main business. And such kitchen masters have their hands full. There are a huge number of banquets, reservations – there are simply no available specialists now.”

Inviting a brand chef to a private event of 50 people, for example, can cost from 200 thousand rubles. up to 500 thousand rubles. This is only a fee, not including expenses for food and serving. The price was compiled for the last week of December. But there are also those who make house calls on New Year’s Day, says the founder of the National Association of Event Organizers, Sergei Knyazev:

“New Year’s Eve costs from 300 thousand rubles. up to 1 million rubles There are at least five chefs in Moscow who will take a fee of 1 million rubles. Famous kitchen masters work under contract with a restaurant group or a specific establishment. We, of course, are going to the management of this company. It is he who signs the contract, not the boss. The kitchen master participates in the discussion of the menu and deadlines, but the contract is signed with the company.

Prices are most often set by a legal entity, and the company shares with the boss, and not vice versa.”

There is a category of Moscow chefs whose contract generally prohibits them from working at private events, Kommersant FM’s interlocutors share. And at the same time, there are many independent professionals on the road. The contract usually specifies the menu and who is responsible for purchasing the products. If the chef, this is an additional expense item, serving and serving time. There is no single price list for such services, notes brand chef and restaurateur Vladimir Chistyakov:

“Chiefs mostly participate in events organized by agencies. They offered the client, for example, to hold an event in the style of Russian fairy tales or on the theme of childhood, and they select a chef. A couple of times in my life I have met clients who themselves indicate the concept. But if they turn to a specific chef, they usually ask to “do the magic.” It all depends on the request. A separate article is the menu for a private event. Sometimes it is written outside the main contract. And for private orders, it is worth considering additional expenses, warns the organizer of the holidays, Sergei Knyazev:

“We organized a gastronomic concert, but not in Russia, but in Portofino. When I asked a local eminent chef if there was any zest in the local cuisine, he answered in the affirmative. It turned out that in this region there lives one mollusk that has long been included in the Red Book; it is prohibited to catch it because it is some kind of very strong aphrodisiac. I ordered the shellfish and the fishermen quietly brought it. Everyone praised the soup made from it very much. The chef’s fee for this gastronomic concert, in my opinion, was about €2 thousand. When we agreed on shellfish soup, he additionally asked for another €1 thousand.”

There are, of course, budget options from chefs. On Avito, for example, there are now about five hundred offers in Moscow with cooks visiting your home. Price – from 10-15 thousand rubles. On “Profi” Ru” when requesting “cook dinner in Moscow City”, the service gives 1.5 thousand options. Price on request.
