Anchovies with a friendly flavor – Kommersant FM

Russians risk losing the familiar taste of Caesar salad. The country is experiencing an acute shortage of canned anchovies, which are used in the sauce for a popular dish. Restaurateurs complained about the shortage, Vedomosti writes. The goods were mainly supplied from Italy, but in August Russia introduced a temporary ban on the import of fish products from unfriendly countries. The protectionist measure is valid until the end of the year, but market players do not rule out that it will be extended.

Catering has found a replacement for European anchovies and imports them, for example, from Tunisia or Vietnam. However, prices for the product have already skyrocketed, said chef Alexander Rastunin:

“The sauce is 1/8 of the flavor of a Caesar salad.” And it comes precisely from those same anchovies. Special connoisseurs will, of course, notice. But the average guest will not pay attention to the “loss of a fighter.” Where are the supplies coming from now? They are produced, but not as good and dried, in Kaliningrad. And Turkey has good anchovies.

If we talk about Kaliningrad, then this is more a version of a pickled product than the one from Italy. Italian anchovy is more fermented than salted, due to some special procedures. Prices have doubled in the last two to three months. If we talk about restaurant options, then the cost of a kilogram has soared to 2-2.5 thousand rubles.”

This year, more than 170 tons of canned anchovies were imported from Italy. For the entire 2022, Russia imported approximately 220 tons of this product. Compared to other fish products, these are not such significant volumes, and, probably, Russian producers will be able to offer a replacement for anchovies from Europe, believes Alexander Fomin, executive director of the Association of Industrial and Trade Enterprises of the Fish Market:

“Anchovy is any sprat, anchovy, and so on – the least valuable fish on all world markets. Even if it is more expensive from Tunisia than from Italy, it’s still nothing. If you don’t have canned anchovy, you just need to look for a replacement – canned sprat, sprat, anchovy. There are a lot of them produced in Russia.

I think these are temporary difficulties. Surely our manufacturers will be able to satisfy the needs of the market, but it will take time to develop technical specifications, their approval and release of products. This will take two to three months. And it’s good, they banned it from Italy, but supplies can be organized from friendly countries – China, Turkey.”

The Russian ban applies to boiled fish, caviar, canned fish, canned crustaceans and mollusks. As Rosrybolovstvo clarified, this will help domestic producers fill the vacant niche. According to the All-Russian Association of Fisheries, over the past year, imports of fish products decreased by a third. The figure was almost 400 thousand tons.
