According to the results of the Roskachestvo inspection of Philadelphia rolls from restaurants, retail chains and specialized take-away stores, it turned out that E. coli was found in 40% of the rolls. Excesses in the number of microorganisms were recorded in 100% of cases. About it “Izvestia” said the head of Roskachestvo Maxim Protasov.

Maxim Protasov explained that the identified violations may indicate improper storage of dishes, that is, non-compliance with the temperature regime, both the ingredients of the rolls and the final product, as well as a violation of sanitary and hygienic standards in their production.

In addition, Mr. Protasov clarified that the packaging of most of the rolls did not contain any information about the composition and date of their manufacture. The head of Roskachestvo stressed that the consumer should know what product he is buying and has the right to receive information about the dish both on the delivery website and from the label on the product itself.

“The fact is that rolls are not singled out as a separate product category. In the technical regulations of the EAEU for this type (culinary products from fish), only two mandatory requirements are established, which is associated with the multicomponent composition. That is, they cannot be attributed to fish products, since for this the rolls must contain more than 40% of fish,” Maxim Protasov said. However, according to Roskachestvo, the rolls contain fish only 9-31% of the specific weight of the product.

Roskachestvo intends to propose an initiative to standardize microbiological indicators in rolls. “Customers ordering such non-traditional products should not be afraid for their health,” Mr. Protasov concluded.
