Salmon caviar production for the period from January to October of this year amounted to 22,288 tons. This is almost 2.6 times more than the same period last year and the highest figure since 2010. This data is provided by the All-Russian Association of Fisheries (VARPE).

The previous record, according to the association, was recorded in 2021. Then, from January to October, 21,569 tons of red caviar were produced, or 3% less than this year.

The increase in caviar production is associated with good salmon fishing in the Far East. At the same time, earlier in the association talkedthat the reduction in wholesale prices is also influenced by foreign economic factors.

Since the beginning of the year, about 609 thousand tons of Pacific salmon have been caught in Russia. At the end of the year, the production of red caviar may exceed 25 thousand tons. At the same time, the annual volume of its consumption over the past five years has been in the range from 15 thousand to 20 thousand tons.

Due to increased production volumes, wholesale prices fall. At the beginning of December, pink salmon caviar in the Far Eastern Federal District cost from 3.4 thousand rubles. for 1 kg, in the Central Federal District – 3 thousand rubles. for 1 kg. On average, this is 20% less than last year. However, in retail, a significant drop in prices has not yet been recorded.
