Black caviar has increased production – Kommersant FM

The production of domestic black caviar has reached its maximum in six years. This is reported by TASS with reference to the All-Russian Association of Fisheries. According to their data, since the beginning of 2023, almost 33 tons of black caviar have been produced in Russia, which is one and a half times more than in 2017. Compared to eight months of 2022, this figure also increased by 4.5%.
Will this trend affect the cost of the delicacy? The founder of the Kurilsky Bereg chain of fish stores, Alexey Rudko, notes that increasing production will only help keep prices down:
“Theoretically, if supply increases and demand does not increase, then the price of caviar should decrease. But besides this, there are a number of factors that greatly influence the cost of the product. For example, imported feed, which is purchased abroad and, accordingly, is cleared through customs. Since the dollar exchange rate has risen, the price of these feeds has also increased. Logistics, planting material, and networks are becoming more expensive. In a word, there is more caviar, but the cost of consumables has also increased.
What is the average price of black caviar now? Officially, retail is about 60 thousand per kilogram. Surprisingly, in all the seven years that I have been fishing, the price of black caviar has not increased much. Maybe just a little bit, unlike the red one, which gets more expensive every year. The price of black caviar is not rising because competition is increasing.
More and more sturgeon enterprises are opening, which is probably why they are holding back the market. The product becomes more accessible. However, there are few large enterprises, but on the contrary, there are many small, almost home-based enterprises with one ton of fish. There’s nothing complicated about building a closed water supply device, buying sturgeon fry and growing it there.”
Now the leaders in sturgeon fishing and black caviar production are the southern regions of Russia, in particular the Astrakhan region. There they produced 20 tons in 2022. In total, the country produces on average about 50 tons of black caviar. At the same time, the consumption of this product is greater, emphasizes Vitaly Kornev, president of the Association of Industrial and Trade Enterprises of the Fish Market:
“Consumption figures have recently been somewhere around 80 tons. Some of our caviar was imported, Chinese, and some came from Latin America. The rest we produced ourselves. Now the production of our own caviar has increased, but we are still very far from saturating the market. Growth is great, but it won’t have any significant impact on the price yet. Own production covered 20-30%, the rest of the caviar was imported. Black – mostly from China.
As for demand, if we divide the volume of black caviar consumption per inhabitant, we get 20 grams of annual consumption – this is a very small amount. Mostly black caviar is bought in large cities such as Moscow and St. Petersburg.”
At the end of August, RBC reported that demand for black caviar in Moscow increased by 11% against the backdrop of a 5% decline in other cities. The publication’s interlocutors noted that this is due to a decrease in real incomes of the regional population.
