Russian restaurants are preparing to raise prices by 15-20% in the fall, they said “Izvestia” interviewed restaurant chain owners and experts. The main reason for the increase in prices will be the rise in prices of products, both Russian and foreign produced.

“Restaurants are trying to keep prices down, but there comes a time when this is practically impossible given the rise in prices of everything: food, gasoline, logistics services,” said Igor Bukharov, president of the Federation of Restaurateurs and Hoteliers of Russia.

The information about the price increase was confirmed to the publication by Oleg Podgorny, general director of Russia’s largest chain of coffee shops, Shokoladnitsa. “If previously we had set a certain price threshold for different categories of dishes, which we did not want to exceed, for example, over 690 rubles. per serving, now we are forced to deviate from this rule and set the price tag higher,” he noted.

At the same time, some restaurants, in order to keep prices at the same level, intend to adjust the menu and change the composition of dishes by reducing the share of expensive ingredients. According to experts, price corrections should be carried out selectively; they should only affect those items that include products that have become more expensive.

In August, Russian restaurateurs complained to a significant increase in prices for chicken and pork. As the ombudsman for the Moscow restaurant market, Sergei Mironov, reported, the increase in prices for chicken and pork among suppliers of Russian restaurants from the beginning of March to the end of July amounted to 20–30%. The Federal Antimonopoly Service announced the start of price checks of the three largest poultry meat producers (the names of the companies were not indicated).
