The increase in consumption of hot coffee by Russians has returned the interest of entrepreneurs in opening new coffee shops. In 2023, the number of such outlets in cities with a population of over a million people in the Russian Federation increased by 10% year on year after a failure in 2022, when the number of such establishments, on the contrary, decreased by 27%. But now, due to the increased costs of launching establishments and the growing popularity of takeaway coffee, the business has begun to focus on small-format outlets, which, according to market players, will further maintain the dynamics of opening new coffee shops.

In 2023, the number of coffee shops (classic establishments and takeaway coffee outlets) in cities with a population of over a million increased by 10% year-on-year, to 15.4 thousand outlets, was calculated for Kommersant in the 2GIS service. Last year, the coffee shop segment began to recover after falling during the 2022 crisis. Then, according to service analysts, the number of such points, on the contrary, decreased by 27% compared to 2021.

Thus, according to 2GIS calculations, in Moscow the number of such points increased by 11.38% year-on-year, to 5.96 thousand, in St. Petersburg – by 10.51%, to 2.96 thousand. The highest growth rates were recorded in Krasnodar – by 15.93%, to 1.15 thousand establishments, in Yekaterinburg – by 14.59%, to 699, and in Volgograd – by 12.56%, to 251. In Kazan, the number of coffee shops did not change over the year. The lowest dynamics were observed in Chelyabinsk (an increase of only 1.01%, to 400 points) and Voronezh (an increase of 3.15%, to 327). Nizhny Novgorod became the only large city in the country where the number of coffee shops decreased over the year by 5.43%, to 348 outlets.

The interest of entrepreneurs in opening new establishments is confirmed by analysts and market players.

According to the Franshiza.ru portal, investor demand for coffee shop franchises in 2023 increased by 6% year on year. In 2023, the Coffee Like chain opened 206 new outlets, while in 2022 – only 35. At Doubleby, the number of coffee shops did not change last year, although in 2022 it decreased by nine establishments. At Pravda Coffee, the number of outlets increased by 13%, and in 2022 it grew by 42%, the company reported. At One Price Coffee, the number of new openings in 2023 was 64, in 2022 – 86 points. The Shokoladnitsa Group of Companies reported that an increase in the number of establishments is planned for 2024.

Franshiza.ru expert Anna Rozhdestvenskaya believes that this growth is due to a delayed cumulative effect. “Those who decided to open in 2022 waited for a difficult time, which included partial mobilization, which affected many business processes,” she adds.

The growth of interest in this business has intensified against the backdrop of increasing coffee consumption. According to the calculations of the Check Index (part of the fiscal data operator system OFD Platform), in 2023 the number of purchases in coffee shops increased by 14% year-on-year, and due to an increase in the average check by 11%, to 634 rubles, turnover enterprises grew by 25%. The company notes that the sales leaders in coffee shops last year were coffee-to-go outlets.

According to Smart Ranking, in 2023 the Russian takeaway coffee market increased by 21% year-on-year, to RUB 102.7 billion.

The increase in coffee consumption was also due to the development of domestic tourism and the return of mass events to urban spaces after the pandemic, says Leonid Simakov, head of Check Index. Although not all coffee shop formats turned out to be in demand among visitors. Coffee Like executive director Dmitry Pletnev says that shopping centers are no longer providing traffic to coffee bars, and because of this, the profitability of such outlets has decreased significantly. The most successful format now is coffee-to-go, because the pace of life continues to grow, notes Doubleby CEO Marina Veiksne. She is confident that the dynamics of traffic growth and the number of coffee shops will continue in 2024. However, entrepreneurs will strive to reduce the costs of new discoveries.

Now there is a situation where coffee has entered the top 10 categories that the consumer does not plan to refuse under any circumstances, says Sergei Rumyantsev, founder of the One Price Coffee chain. He also hopes that a transformation of the format is expected in the coming years, when the number of takeaway coffee establishments will begin to decrease in favor of full-fledged coffee shops with a more expanded assortment.
