Bakeries have become a new growth point in the catering market: the turnover of such establishments increased by 10% at the end of last year, and their audience almost reached 40% of residents of large cities, Romir experts calculated at the request of Forbes. The number of transactions on the market increased by almost a third. At the end of 2023, 400 million purchases were made in such establishments. How much does it cost to open a bakery? And what explains the rise in their popularity? Daniil Babkin talks about this.

38% of residents of large cities visited bakeries in 2023. Compared to 2022, the turnover in this area increased by 10%, to 124 billion rubles. According to this indicator, the market for such culinary products is already ahead of the neighboring “coffee to go” segment. As expected, the leaders in the number of points were Moscow and St. Petersburg. In the capital, the increase was 20% in just a year. The trend was confirmed in the Franshizaru project. Its director, Anna Rozhdestvenskaya, told how much it might cost to open a bakery-cooking shop:

“Previously, so-called monofranchises of coffee shops or bakeries, where mainly one type of product was sold, were popular. Now there is a trend towards some kind of mixing of concepts, and this is often coffee shops and bakeries.

You can start such a business with an investment of 2 million rubles. And here a lot will depend on the area of ​​the coffee shop. It is clear that for 2 million rubles. this will be the simplest option with the most unpretentious concept and design. If you calculate everything correctly, you can achieve a payback period of 12 months.”

Many establishments open next to or right in residential complexes: approximately every fifth square meter of such commercial space can be occupied by bakeries. This is often facilitated by the developers themselves, who leave space for cooking areas in advance. In addition, after the COVID-19 pandemic, business began to pay more attention to residential areas, explained Olga Yarullina, director of Ricci Retail:

“The rate per square meter can vary greatly. If we are talking, for example, about the periphery of the city, then the rent can be 150-300 thousand rubles. Location is key. And for bakeries, these could be central streets, areas with developed residential infrastructure, or shopping centers.

There is a wonderful saying: the buns saw the cost per square meter and became round. At the same time, many entrepreneurs moved to residential areas. The COVID-19 pandemic has played a particularly cruel joke on them. Against this background, the central streets were less protected.”

More bakeries are also opening because of the efforts of large retailers, experts say. For example, when opening regular stores “Pyaterochka” or “Magnit”, coffee and culinary outlets are immediately provided. Smaller players are experiencing difficulties, mainly associated with rising prices and wages, notes David Gazzati, owner of the Galabu Group restaurant group:

“The cost of a good product increases monthly. For example, a croissant could be bought for 250-300 rubles, but today it costs 500 rubles and 600 rubles. costs. In addition, people are looking for a good cook or pastry chef and cannot find such specialists. Employers are forced to increase wages, and employees sometimes simply move to another company. The person who is left without a pastry chef, in turn, also raises his salary.”

The interest of Russians in such establishments is explained not only by the fashion for quick breakfasts, experts say. Perhaps the increased level of stress in recent years has played an important role: because of it, the consumption of flour and sweets among city residents usually increases.
