The costs of creating a kitchen factory can exceed 500 million rubles. There is now great demand for ready-made meals from retailers, but experts warn that further growth in this segment is not yet obvious.

Businessman Ervand Galstyan bought from Dom.RF a plot of 1.7 hectares near the village of Chashnikovo, Khimki district, near Sheremetyevo airport, according to the GIS “Torgi” data. The transaction amount was 103.9 million rubles. Dom.RF explained to Kommersant that investors have no obligations regarding the further development of the asset. Ervand Galstyan, through a representative, told Kommersant that it is planned to build a large Union Food ready-to-eat factory on the site. NF Group partner Konstantin Fomichenko estimates investments in such a project at 300–500 million rubles.

Mr. Galstyan owns the Family Garden restaurant holding, founded in 2013. In partnership with Arkady Novikov, he develops, in particular, the Syrovarnya, Klevo, and Medusa restaurants. The businessman also controls the Orange shopping center in Sochi, the Panda Sushi delivery service and the Mr.Food food production. The latter supplies products to restaurant and retail chains, including KFC, Burger King, Vkusno – period, Cofix, Vkusville, Lenta.

A kitchen factory near Sheremetyevo Airport will probably operate under the Mr.Food brand: several vacancies are now open on behalf of this company on the hh.ru resource, which have appeared in connection with the launch of a new production site at the site address. Mr. Galstyan explained that one Mr.Food kitchen factory is already operating in Khimki, in the Skhodnya microdistrict. But its capacity, according to him, is not enough due to high demand. The area of ​​this facility is 30 thousand square meters. m, it produces 50 thousand tons of products per year. Another kitchen factory with an area of ​​70 thousand square meters. m businessman expects to open in Krasnodar. “Negotiations are currently underway with local authorities to support the opening of production,” he explained. In the spring of 2023, investments in this project were estimated at 12 billion rubles.

The prepared food market is currently growing. Its total volume at the end of 2022 was estimated by Rosselkhozbank analysts at 216 thousand tons, which is 27.1% more year-on-year. By 2025, as experts predict, this figure may increase to 800 thousand tons. Sales turnover in this segment in 2022 at Rosselkhozbank was estimated at 2.3 trillion rubles, which is an increase of 4.7% year on year. According to NielsenIQ, sales of prepared food in retail chains in 2022 increased by 21% in monetary terms: 56% of turnover comes from prepared salads and bakery products.

Vkusville calls ready-made food one of the most popular categories among customers, accounting for 17% of the company’s revenue. The sales growth rate here is higher than the network average, the company added. Commercial Director of Cofix Yana Alkhutova says there is a need to expand the capacity of suppliers: “This affects not only the quantity of assortment, but also the speed of introduction of new products, and, as a result, turnover.” According to her, during the period of active rotation of the assortment, food sales in the chain grow by 15%. Vkusvill also pays attention to the importance of updating the assortment. “The buyer chooses his favorite dishes and, seeing a new product, cannot pass by, so the filling of the check increases,” the network notes.

Restcon CEO Elena Perepelitsa says that now many restaurateurs are switching to ordering ready-made dishes and semi-finished products, trying to reduce costs and risks when opening new establishments. But the restaurant market itself, according to her, is showing restrained dynamics – this will also limit the development of the ready-to-eat food segment.
